Spicy Tempeh Burritos

Spicy Tempeh BurritoIf you can chop some ingredients, cook them in a single skillet, and wrap them in a flour tortilla, then you can make the CooktopGeek’s vegan Spicy Tempeh Burritos!

For those new to this, tempeh is a delicious fermented soybean protein originally from the island of Java.  In some circles it’s also known as “Javanese meat”.  While tofu is generally more versatile, I personally find tempeh to be a better option in many dishes because of its unique texture and flavor. Most grocers (especially organic) carry tempeh together with their soy-based meat alternatives.  For this recipe I personally used a variety containing flax seed (because well, it’s good for you), but you can use any variety of tempeh you like.

Ingredients:

  • 1/2 yellow onion, coarsely chopped
  • 1/4 red pepper, coarsely chopped
  • 1 green bell pepper, coarsely chopped
  • 1 jalapeño pepper, coarsely chopped (seeds removed to make less spicy)
  • 8oz tempeh, cut into small cubes
  • 1 cup whole kernel corn, drained
  • 1 cup black beans, drained
  • 1 cup cooked brown rice (make ahead of time per package directions)
  • 2 tbsp extra virgin olive oil
  • 8 tbsp of your favorite organic salsa (e.g. Newman’s Own)
  • 4 organic white flour tortillas, warmed (15 seconds/tortilla in microwave, covered w/paper towel)
  • spices to taste (salt, pepper, cumin, turmeric, etc.)

Skillet:

  1. heat olive oil over medium-high heat in large skillet (use nonstick for less mess)
  2. combine onions, peppers (all 3 types), tempeh, and 2 tbsp of salsa
  3. season with salt, pepper, cumin, and turmeric to taste, combine well
  4. stir fry for approximately 10 minutes
  5. reduce heat to low
  6. add brown rice, corn, black beans, 2 tbsp of salsa, and combine well
  7. continue to stir frequently for approximately 5 minutes
  8. remove from heat

Assembly and Plating:

  1. lay one flour tortilla flat on each plate
  2. fill each tortilla with appropriate amount of filling (depending on size of tortilla, generally 5-6 tbsp)
  3. roll tortilla and filling, and fold underneath so it stays on plate
  4. spread 1 tbsp of salsa on top of burrito
  5. spoon 1-2 tbsp of filling on each side of burrito

Optionally serve with organic blue corn tortilla chips and extra salsa.

Total cook time: approximately 30 minutes, including prep and assembly

Makes approximately 4 servings - about 12-15g of protein per serving!
